DUM ALOO

Ingredients

450 gm small potatoes

1 medium onion

4 tbsp oil

1 tsp chili powder

1/2 tsp turmeric powder

2 tsp ginger paste

1/2 tsp sugar

as per taste salt

150 ml water

1 1/2 tsp garam masala

chopped coriander leaves, to garnish
Cooking Directions

Scrub or peel the potatoes and cut them into even-sized pieces.

Boil them until just tender.

Grind the onion to a fine paste.

Heat the oil in a pan,

add the onion paste and fry until lightly browned.

Then add chili powder,turmeric powder,ginger paste,sugar and salt.

Fry for 1-2 minutes without letting the mixture burn,

then add water.

when the water begins to simmer,

stir in the potatoes,

cover and cook until the sauce has thickened.

Sprinkle with the garam masala and remove from the stove.

Garnish with coriander leaves and serve.
